I found a Igloo 100 quart cooler in the trash on Friday. The hinges were broken. The latch was missing. Today I have a good as new Igloo 100 quart cooler.

It cost $10. I got the replacement hardware from Amazon. Replaced the broken and missing parts.

Done.

It’s like printing money.

Notes

The factory hinges are NOT designed to fold all the way back. There is a strap on the inside that is designed to hold open the lid. If the strap is missing, the hinges are going to break.

There is an aftermarket hinge made with hose material that might be better if you need hinges open all the way. I did it with factory parts for you, gentle reader. I plan on returning the cooler to the people who tossed it. I left some notes in Sharpie to whoever goes on this adventure next time.

Alternatively, you could live without the hinges. Or use metal hinges with cotter-pins so the lid is remove-able.

Curry rice in the Instant Pot

Merryweather asked about curry chicken today. I looked up curry rice and went from there. I did it one pot. It took about 20 minutes. The results were edible.

Ingredients

  • 1/4 cup of Olive oil for sauté’ing
  • 1 cup rice.
  • 1 onion chopped
  • Large handful of mini non-hot peppers chopped
  • Tablespoon of curry powder
  • 1/2 Tablespoon of turmeric
  • One cup of water
  • One bag frozen peas
  • One bag frozen corn

Recipe

  1. Put the Instant Pot on Sauté.
  2. Add oil, dry rice, onion, peppers in the instant pot. Sauté it.
  3. Once everything is sautéd, Onions are browned, soft, etc, add in the curry powder and turmeric
  4. Mix well
  5. Add a cup of water, cancel sauté, then Set the instant pot to rice, put the lid on it, etc
  6. Get out a bag of frozen peas and frozen corn. Cook them per instructions in the microwave.
  7. Drain water
  8. Add them to the finished rice
  9. Stir well
  10. Serve

Results

It smells amazing, but the flavor is pretty neutral. Kind of bland.

We had it with grilled chicken. Should be great leftovers, but it was kind of boring. The rice was clumpy. I wanted to dump some hot sauce on it. I don’t know anything about hot sauce for “Indian” food.

Next time, I would do a couple of things different.

  • Wash the rice
  • Cook the rice with the seasoning in the instant pot
  • Saute’ the rest of the ingredients in a wok and then mix in the cooked rice.
  • Add some hot pepper.
  • Merry weather thought it needed marsala sauce.

Chicken Enchiladas… Not from my oven

Mrs. Jon Bruce Entertainment sent this recipe to me. I made it. It was excellent. I substituted jalapeños for the mild peppers. It was one of the hottest things I have ever made. Really good too.

Why?

I got to make a white sauce. Butter, flour, beef stock, sour cream

Once again, I substituted jalapeños for the recommended peppers. It was spicy.

I am going to have my kid try making the white sauce.

Instant pot hard boiled eggs 4 minutes

Quick

Eggs, a cup of water, 4 minutes

Use an ice bath or tap water to cool the eggs and peel them.

Long version

Use the trivet or a basket or layers, like an ogre.

Put a cup of water in the bottom

Stack eggs

High pressure 4 minutes

Rinse the eggs and peel them

4-4-4

The generally accepted cook time for hard boiled eggs is 4-4-4.

4 minutes high pressure

4 minutes natural release

4 minutes in an ice bath

It works great for my pot.

I started eggs and left them to sit for an hour and eleven minutes. I got to play Fortnite for an hour. The eggs are edible. They are not pretty. The white is off white. The outside of the yolk has changed color. It’s green. These are over cooked. The world did not end.

Notes

The eggs will continue cooking as long as you have heat on the eggs.

They peel really easy. I usually make eggs for use at a later date. I just burn my fingers peeling them and throw them in the fridge.

Putting them in an ice bath or running some water makes your fingers burn less. Cold water makes the eggs easier to peel.

Simple syrup for your sizzurp.

Ingredients

  • Water
  • Sugar
  • Heat

Technique

  • Measure equal parts water and sugar
  • Heat the water up to around boiling
  • Pour in the sugar
  • Stir to dissolve
  • Cool
  • Put it in a container to use
  • Why?

  • Simple syrup is for bar use. Today I was making emergency Mint Juleps and decided to make simple syrup.
  • I also made a totally amazing lemon shake up. Shockingly amazing.
  • I now think I am some sort of bar tending genius.

Costco Salmon Sous Vide in the package

Science

Salmon Sous Vide Costco sealed from the grocery.

I got some wild caught, previously frozen, Salmon at Costco. It is sealed. Not as heavy duty as the Costco chicken breast. I trimmed the package to fit comfortably in the Sous Vide cooler. It looked like the packaging was holding up. So I went for it.

Ingredients

Salmon in vacuum sealed packaging that might possibly work.

Recipe

  1. Put the salmon in the costco vacuum sealed package into the Sous Vide
  2. 122 degrees
  3. 40 minutes
  4. Remove from Sous Vide
  5. Finish on a hot grill with salt and butter or whatever

It worked!

The packaging held together! Came up to temperature. Didn’t leak. There was a moisture pad in the packaging that cooked inside the package. It wasn’t an issue.

Red Potatoes Instant Pot in 20 minutes

Red Potatoes in an Instant Pot in about 20 minutes total.

Instant Pot

Recipe

  • Get a couple hand full of Red Potatoes or as many will fit in an Instant Pot
  • Wash them off
  • Put them in the Instant Pot using the trivet or a steamer baskets
  • Put 1 Cup or so of water in the pot.
  • Manual/High Pressure 10 Minutes
  • Manual Release

Ingredients

  • Red Potatoes
  • Water

What then?

Butter, put them in something else, eat them plain, mash them, make potato salad. Go Crazy.

 

Costco Chicken Breast Sous Vide in two hours.

Ingredients

Costco Chicken Breast – Do not open the vacuum pack it comes in. If you have a package that might be leaking, put in another vacuum sealed bag or a ziploc with the air out of it.  So you can do two at a time. Look closely, each pair has a separate package that can be trimmed.

Setup

Frozen – Set the sous vide for 146 degrees and 2 hours.
Thawed – Set the sous vide for 150 degrees and 1 hours.
The FDA says “Cook all poultry to an internal temperature of 165 °F”

Recipe

  1. Setup up your sous vide
  2. Put Costco Chicken Breast in the basin using the vacuum sealed bag it came in.
  3. Set the sous vide for 150 degrees and 1 hour.
  4. Cut open the bag
  5. Remove the everything that isn’t chicken breast.
  6. Enjoy the greatest Chicken Breast ever

Are you crazy?

No, I really like chicken breast. I like having it around. I used to George Foreman it. All the time. It’s not bad. It gets old, but it gets dry. This was literally the first thing I thought of when I learned about sous vide cooking.

No muss, no fuss. There is probably a food scientist that will say that the vacuum bags aren’t good enough and cause gills. I don’t mind being able to breathe underwater. My wife thinks Jason Momoa is hot. Jason Momoa is Aquaman. Win = Win = Win.

Yes, they do. The general consensus of sous vide recipes is that 146 degrees for more than an hour. I usually turn my chicken breast into tacos, which get heated up in the microwave before I eat them. I have also eaten the chicken fresh out of the sous vide. It’s probably the best plain chicken you will ever try.

Clean up is easier.

If you have ever cleaned a George Foreman Grill or anything that chicken has been cooked in, you are going to want to try this.

Pros and Cons

Pros

  • Delicious Chicken Breast with no hassle
  • Wife may confuse me with Jason Momoa
  • Have chicken lying around for other recipes
  • Easiest Clean up

Cons

  • May Cause Gills
  • May Cause Veganism. The stuff that is not chicken breast in the package is not my favorite thing to see.
  • The FDA says “Cook all poultry to an internal temperature of 165 °F”
